Welcome to garlic bread heaven.
Makes 1 cup of garlic spread for 1 amazing loaf of garlic bread.
Ingredients:
2 bulbs of garlic
1 cup parsley (tightly packed), washed and chopped
1/2 cup vegan butter, melted or warm enough to easily spread on bread
1 tbsp fresh lemon peel
1/2 tsp salt
1/2 tsp freshly cracked black pepper
1 fresh loaf of bread
Directions:
Preheat oven to 400°F.
Cut the tops off of garlic bulbs, drizzle with a bit of oil, wrap in foil, and bake for 35-45 mins.
Meanwhile, in a small bowl, combine parsley, butter, lemon peel, salt, and pepper.
Once garlic is done, remove from oven and lower temperature to 350°F. When garlic is cool enough to handle, remove the peel, roughly chop, and add to bowl. Mix well to combine all ingredients.
Cut loaf of bread in half and lather on garlic butter spread.
Pop it in the oven for 15 mins, checking every 5 mins to make sure it reaches your perfect golden color. (I like mine soft overall with a bit of crunch.)
Remove garlic bread and let cool for a couple of mins, then slice and enjoy.
Notes:
Add shredded vegan cheese for a super delicious final look (flavor-wise, it's not needed but I get it, sometimes you're feeling cheesy).
Add a handful of fresh chopped chives, tarragon, and/or basil (with or without the parsley) for a herby garlic bread. Another herby combo is P.O.T. Parsley, oregano, and tarragon. 😁
You can broil the loaf for 2-3 mins (after baking for 15 mins) but watch closely and do not step away. Make sure it doesn’t burn!
Step by Step
1. After the oven's on, we start with the garlic.
2. Cut the tops off the bulbs, drizzle a little oil on the exposed garlic (sprinkle with a little salt if you feel fancy), and wrap in foil. Note: If you want to skip the oil, it may be a little more charred (when roasted) but nonetheless, it'll work. Just pack the foil tightly around your garlic.
After 35-45 mins, it'll look golden and if you poke a knife in it, it'll be soft like room temp buttah. If there's resistance, it needs more time in the oven.
Alternatively, you can peel the garlic prior to roasting which is sometimes what I'm in the mood for. It's cleaner and I don't have to burn my fingers trying to take the peel off. (I'm much too impatient to wait for the garlic bulbs to cool.)
Steps 3 + 4. Mix all of your ingredients together in a small bowl. The fresher the ingredients, the better the final product. For vegan butter, my highest recommendation is Miyoko's Cultured Vegan Butter. It's pricy but it is next level.
Mix.
5. Cut a fresh loaf of bread in half and slather on your glorious garlic butter spread.
Oh man.
6. This is baked in the oven for 15 mins exactly at 350°F, then broiled for 2 mins.
7. Voila. You've made the greatest garlic bread that you and whoever's-lucky-enough-to-be-in-your-presence-in-this-moment has ever had. 🙌
I found this recipe many years ago online. It called for dried "lemon pepper" which I had never heard of and bought in the spice section of the grocery store. Until, that is, I met my husband who said "why don't you use real lemon?" 🤔🤯
The freshness and combination of the ingredients make this bread so special. Swapping real butter for a vegan version eliminates hormones, IGF-1, and too many other things that'll ruin our appetite here.
