Ingredients
5 cups of cooked rice (brown rice of any kind is best since it's a whole food)
2 cups of kimchi, chopped up if you prefer
1 green onion, sliced
1 tsp of soy sauce
1 tbsp of brown sugar
1 tsp of gochugaru Korean red chili powder (optional)
roasted sesame seeds (optional)
1-2 cups of water, for cooking
Directions
Step 1
Heat a nonstick pan over medium heat. Add sliced green onion and kimchi and saute for a few minutes until kimchi has softened. (Optional: use 1 tbsp of cooking oil instead of water). As the kimchi and green onion cook down, if the pan gets too hot and things are burning, add about 1 tbsp of water at a time.
Step 2
Add soy sauce (1 tsp), brown sugar (1 tbsp), and gochugaru (1 tsp) if using - mix.
Step 3
Mix in cooked rice. Once the rice is well mixed with everything, flatten the rice in the pan and cover for about 2 minutes over medium low heat.
To plate
Top with fresh green onions and roasted sesame seeds. Voila!
