Fully Loaded Nachos

Need we say more? Grab the cold beer and let's dive into these.



Makes enough to cover a 26 x 18 inch sheet pan


Ingredients:

  • Corn chips - I like these and will use an entire bag

  • 1 tomato, diced

  • 1 15 oz. can of black beans (if you can cook beans from scratch, even better)

  • 1/2 cup corn

  • 1/2 cup purple cabbage, diced

  • 1/2 cup pickled jalapenos

  • 1 cup cilantro

Directions:

Preheat oven to 350°F. Cover a sheet pan with either parchment paper or tin foil. Spread chips evenly throughout pan. Add diced tomato, black beans, and corn. Heat in oven for 15-20 minutes to warm chips and rest of ingredients.


Remove from oven and top with diced purple cabbage, pickled jalapenos, fresh cilantro, cheese sauce, guacamole, and taco beef crumbles.


Cheese Sauce Ingredients + Directions:

  • 1 yellow potato, roughly chopped

  • 1/2 yellow onion, roughly chopped

  • 3/4 cup nutritional yeast

  • 2 tsp salt

  • water to cover potato and onion

Optional: add 2 tbsp coconut oil to give it a richer mouth feel (but not necessary and can be omitted, especially to keep this healthier).

In a small pot, add potato and onion and cover with water. Boil and cook for 10 minutes. Don't overcook since the sauce will become too starchy and not have a creamy texture. After 10 minutes, add the rest of the ingredients and immersion blend until smooth, or use a blender.


If you'd like a thicker consistency, in a small pot, place over low heat and stir. After a few minutes, the sauce will thicken. If the consistency is still too thin, add 1-2 tbsp of tapioca starch over low heat, continue to stir.


Edamame Guacamole Ingredients + Directions:

  • 1 cup cooked edamame beans

  • 2 cups avocado

  • 1/2 cup cilantro

  • 1/4 cup red onion

  • 2 tbsp lime juice

  • 1tsp cumin

  • Salt to taste

Place all ingredients into a food processor and blend.


Taco Beef Crumbles Ingredients + Directions:

In a small pot or pan, heat and cook The Beefless Ground according to package directions. Add taco seasoning and mix.


Note: for a much healthier option, you can omit the Gardein The Beefless Ground. You don't get this amazing look of real ground beef, but it'll make for a healthier meal or snack!
