Creamy Carbonara

Plant-based (i.e. healthy), easy, and comforting. What more can one ask for?


This version has no added oil and if using a pasta from Jovial, you'll reach new heights in health, flavor, and texture.


Makes 4 servings.


Ingredients:

  • 14 oz organic tofu

  • 1/4 cup sauerkraut

  • 1/4 cup sauerkraut brine

  • 3/4 tsp nutritional yeast

  • 1 tbsp miso paste

  • 1 tbsp apple cider vinegar

  • 1/8 tsp cayenne pepper

  • 1/4 tsp smoked paprika

  • 1 tsp sea salt

  • 2 tsp black pepper

  • 1 lb pasta


Directions:

  1. Boil water in a large pot and cook pasta according to package instructions.

  2. In a blender, add tofu, sauerkraut and its brine, nutritional yeast, miso, apple cider vinegar, cayenne, smoked paprika, and salt. Blend until smooth.

  3. Once pasta is cooked, drain, add carbonara sauce, mix to heat through and enjoy.


Speaking of health...


This dish has 18 grams of protein per serving; 2 grams of fiber (only found in plants); zero cholesterol; and a slew of vitamins and minerals like potassium, calcium, iron, thiamine, riboflavin, niacin, folate, phosphorous, magnesium, zinc, selenium, and vitamins A, C, B, B12.


A nice olive oil can be added to the sauce to make it richer yet it's not needed for this already decadent dish.


Top with sautéed mushrooms and/or a fresh herb like tarragon, basil, or parsley if you've got a hankering for it. It's added nutrients. 🙌
