Cashew Caesar Dressing

The best plant-based Caesar dressing was found thanks to Google and Clean Food Dirty Girl


Makes 1 cup of dressing


Ingredients:

  • 1/2 cup raw cashews soaked in water for 10 minutes if you have a high-speed blender (or, soak for about 30 mins if using a regular blender, until they're softened)

  • 2 cloves of garlic, minced

  • 1/2 tsp Dijon mustard

  • 2 tbsp Nutritional Yeast

  • 1 17 oz. package of roasted seaweed like this one

  • 1 tsp apple cider vinegar

  • 1 tsp Worcestershire sauce

  • 1/2 tsp sea salt

  • 1/2 cup water


Directions:

Drain and rinse the cashews, then place them in a blender with the rest of the ingredients and blend until creamy.

Get Inspired


You can keep this traditional and use Romaine lettuce, or switch it up for even more nutrition.


I'll typically use kale since it can't get darker, greener and leafier than king kale!

  1. Wash kale and tear leaves off their stems

  2. Massage leaves, squeezing them in the palms of your hands to soften since they're quite tough and fibrous

  3. Tear into small pieces

  4. Toss with dressing and add freshly cracked pepper to taste

I'll top this with whatever other fresh veggies we have on hand. I love adding chopped purple cabbage and sliced radish, which happen to be cruciferous vegetables and also packed with phytonutrient minerals, vitamins and antioxidants. #plantpreferred
