Black Lentil Caviar with Herb Aioli

Rich, savory (and addictive!) bites of goodness - these are the best hors d'oeuvres to show off at any party.



Makes approximately 30 appetizers


Black Lentil Ingredients + Directions:

  • ½ cup black lentils

  • 1.5 cups water

Remove any debris, then rinse lentils in a fine mesh colander. Add lentils and water to a small pot and boil. Once boiling, turn down heat and simmer for 15-20 minutes until lentils are al dente (not too soft, not too hard).


Herb Aioli Ingredients + Directions:

  • 1 cup Vegenaise

  • 2 tsp minced garlic

  • ½ tsp salt

  • ¼ tsp lemon or lime juice

  • ¼ tsp freshly cracked pepper

  • 2 tbsp fresh chopped tarragon, or your favorite herb

Mix all ingredients together and set aside. Adjust salt & pepper to taste.


The Perfect Party Appetizer

This is a consistent hit because of it's freaking delicious. The addictive element comes from the aioli and its salt + fat content (Vegenaise = oil = fat). Add garlic and a fresh herb and we've just reached a new level.


Simple Melba toasts or Whole Foods' Mini Toasts are best, but almost any cracker will do - use what you like best. Add aioli to toast, then lentils, and top with your favorite herb, freshly chopped.
